Recipe: Fried Ice Cream using Medella Coconut Oil

Ingredients
1 container Vanilla Ice Cream
3 cups crushed corn flakes
1 ½ cups biscuit crumbs
3 tablespoons sugar
2 eggs, lightly beaten
Medella Coconut Oil, for frying

Method:
1. Scoop the ice cream into large scoops and freeze for at least an hour, until ice cream scoops are firm.
2. Combine crushed corn flakes, biscuit crumbs and sugar in a mixing bowl.
3. Remove the frozen ice cream scoops from the freezer. Dip a scoop into the crumb mixture, then into the beaten eggs, and then back into the crumb mixture. Make sure that the ice cream is completely covered and work quickly so they don’t melt too much. Place the coated ice cream balls back into the freezer for at least 2 hours, or until the balls are completely firm.
4. Heat about 3 inches of Medella Coconut Oil in a small pot. Gently lower it into the hot oil. Fry it for about 30 seconds until golden brown.
5. Top with chocolate syrup and serve immediately.
